The Home Lovers of the Zodiac are addicted to cream and a creamy cheesecake with strawberries is a cooling counter-balance to lift their mood, refresh and comfort. Your Cancerian friends will be over the Moon with this baked Strawberry Cheesecake.

STRAWBERRY CHEESECAKE

Ingredients

75g (3oz) margarine, melted
225g (8oz) digestive biscuits, crushed
225g (8oz) low fat soft cheese
50g (2oz) castor sugar
Grated ring of 1 lemon
2 eggs, beaten
150ml (¼ pint) whipping cream, whipped
350g strawberries, hulle

Method of preparation

Mix together margarine and biscuits and turn into a 20-23cm (8-9inch) flan dish. Press the mixture firmly over the base and up the sides. Chill. Cream together cheese, sugar, lemon rind and eggs. Fold in cream and pour over base. Bake in preheated oven 180°C, 350°F, Gas No.4 for 25-30 minutes. Cool. Decorate with strawberries.
